This is a great one for leftovers the following day and is one of those salads that doesn’t go sad and soggy but actually benefits from the noodles soaking up all the delicious dressing. Red Thai Satay Chickpeas with Panfried Halibut and Coconut Crumb

An easy weeknight dinner which is full of flavour and plenty of goodness. Great as a veggie recipe if the chickpeas are served with some flatbreads/naan/sourdough to mop up all the deliciousness, or can be topped with any protein of your choice. Have to say it was pretty yummy with some panfried chunky pieces of halibut. One to save for your weekly rotation for sure.

Prawn Penang Curry

This is a great recipe which has saved me so many times when I’m short on time and energy. The paste makes enough for several servings of curry and freezes really well. I love prawns in a curry and they work particularly well with this aromatic, nutty, slightly spicy sauce, however this recipe is delicious with chicken too.

There is nothing like a fresh and aromatic homemade Thai green curry. Served with some crispy panfried seabass and a zingy, crunchy, peanutty slaw, this feels slightly more special than your standard midweek thai green curry out of a jar. Although I love a thai green curry with prawns, chicken or veg, the lovely fresh, clean taste of the sea bass goes so well with the rich, coconutty sauce.

Seared Beef Noodle Salad with Asian Dressing, Peanuts and Crispy Garlic and Ginger

This is a fresh and zingy salad that is a great way to satisfy your beef cravings and still enjoy a light meal. Salty, sour, sharp, and nutty, this would make a lovely dinner party starter in small quantities or it would also be great on the bbq in the summer. It’s also very quick to prepare on a midweek night and works really well as leftovers (that’s if there is any).
