Smoky Beef Chilli Sweet Potatoes
This recipe has all the flavours you crave from a Mexican meal, minus the unhealthier parts. Its great for leftovers and a really delicious and easy way to get some of your 5 a day. The smoky beef chilli goes so well with the sweetness of the sweet potato, while cooling sour cream and salty cheese add more layers of flavour. This is great for batch cooking and a healthy comforting recipe everyone will love. I’ve included recipes for my guacamole, tomato salsa, and homemade garlic paprika tortillas which also work really well with this recipe.
Traybake Chicken Fajita Bowl
A healthy take on your typical family fajita recipe. The joy about my version is the chicken can be cooked in one roasting tray so it’s much less faff. I also think the chicken dries out less cooked this way too. Great one for the family and also ideal for leftovers.
Healthy Beef Chilli Bowls with Guacamole, Air Fried Tortilla Chips and Pico de Gallo
These beef chilli bowls are perfect to make on a Sunday night to serve you through the rest of the week. I sometimes make a double batch of the chilli which I can then freeze for emergencies (your future self will thank you). I make mine with lean beef mince, kidney beans and black beans for extra protein if I’m trying to be healthier. Red peppers add more veggie goodness and then a mixture of chilli powder, smoked paprika, oregano, cumin, coriander, garlic, and optional chipotle flakes for added smokiness all add more punch. I like to add some 70% dark chocolate, a splash of soy, worcestershire sauce and a spoonful of marmite for added richness.
Cajun Spiced Salmon with Pea Guacamole, Black Bean and Chilli Quinoa and Citrus Red Cabbage
This is a healthy, vibrant and delicious salmon recipe which is packed full of plenty of nutritious vegetables. The pea guacamole is an absolute game changer and works really well with the cajun spices on the salmon. Full of colour and texture, it also makes great leftovers the next day.
