Tikka Prawns with Caramelised Onion Rice, Pomegranates & Raita
One of my favourite meal prep recipes. It’s also a bowl of sunshine so felt apt to share it now spring finally seems to have decided to arrive. Spicy, juicy prawns with a fibre packed aromatic, fragrant rice packed with veggie goodness. It’s got sweetness from caramelised onions and mango chutney, warmth from spices, and a cooling and refreshing mint raita which pairs with it all perfectly. Topped with toasted almonds, pomegranates and extra coriander, this is a flavour explosion with every mouthful.
Golden Cauliflower, Chickpea and Squash Curry with Pomegranate Raita
I love veggie curries for when I’m craving some spice but want something a bit fresher, lighter and healthier than a meat curry. Roasting cauliflower and squash in lots of spices helps to amp up the flavour and give a slightly smoky, charred flavour to the finished dish. With a refreshing raita with added pomegranates for texture and a fruity burst, mango chutney, extra lime, and some toasted flaked almonds, this is a comforting weeknight meal which doesn’t take long to prepare and will help get you towards your 5 a day.
Spiced Poppadom Crusted Chicken Wraps with Raita, Pickled Red Onions and Mango Salsa
I wanted to come up with a chicken wrap recipe which had all the flavours of a curry but had crunchy chicken breasts as it’s centrepiece. The chicken was so moreish - crunchy, slightly spicy and lovely and moist inside. With punchy mango salsa, cooling raita, sharp pickled onions, sweet chutney and fresh lettuce, these wraps are full of texture and flavour. They are also perfect for leftovers the next day (that’s if there will be any left). This would make a great Friday/Saturday night meal.
